Blueberry Pie Filling

  • 2 tablespoons cornstarch
  • 1/2 cup sugar
  • 2 cups fresh or frozen blueberries
  • 1/2 cup water
  • 1 teaspoon fresh lemon juice

Strawberry Pie Filling

  • 2 tablespoons cornstarch
  • 1/2 cup sugar
  • 2 cups fresh or frozen strawberries
  • 1/2 cup water
  • 1 teaspoon fresh lemon juice

I used trader Joes Pie Crust. It’s easy and delicious!

This recipe is so easy for kids to help out. The trader joes pie crust is so yummy, and once thawed, it is super easy to work with. My four year old helped with every step of the pie filling! She loved getting out the fruit, putting it in a colander, washing it! She helped to cut the strawberries and the lemon and especially loves squeezing the lemon herself! 

I showed her how to put the pie crust in the pan one time!! I was so shocked when she asked to try it and is an expert baker at the age of 4. We used a mini cookie press to cut out some stars, and a pizza cutter to slice some stripes with the left over pie crust. She had a blast scooping the filling into the pies. 

The one-on-one time spent with her was most likely her favorite, but  she also will benefit from all of the fine motor skills, following directions, and so much more for her development.
